Winter just got seriously good

Winter has always been a tough one for me when it comes to food

Winter sees me spending the entire 3 months craving carbs and all the bad stuff. I could quite easily hibernate and eat all the food. Not only does this make me look tired, it makes me feel yuk. Having an auto immune disease means that making the wrong choices wrecks me. A moment on the lips is at least a week of feeling terrible. This winter I have started adding bone broth into my diet, and I have managed to stave off the cravings whilst giving my body a serious hug from the inside out! Bone Broth is great for weight management, gut health, arthritis and joint health. This delicious broth, full of goodness helps repair your gut which leads to stronger and healthier hair and nails too! Win win!!! Here’s a beautiful recipe from Liquid Gold Bone Broth for you and your family to enjoy.

Chicken Noodle Soup

Ingredients

2 tablespoons extra virgin olive oil

1 small onion, finely chopped

1.5 L Liquid Gold Chicken Bone Broth (can use 500 ml of water instead of 500 ml bone broth, but recommend using all bone broth)

3 cloves garlic, finely sliced

1 stalk celery, sliced

100g spaghetti, broken into lengths (can use gluten free spaghetti for GF version, or zucchini noodles for low carbohydrate version)

2 chicken breast fillets (500g), cut into 1cm strips

2 cups (40g) baby spinach leaves

Cracked black pepper, to serve


Method

  1. Heat the oil in large sauce pan over high heat. Add the onion, garlic and celery and cook, stirring, for 4–5 minutes or until soft.
  2. Add the bone broth and water and bring to the boil. Add the pasta and cook for 5 minutes or until just starting to soften. (if using zucchini noodles add these after the chicken, require short cooking time)
  3. Add the chicken and cook for a further 4–5 minutes or until cooked through.
  4. Remove from heat and stir through the spinach. Sprinkle with pepper and divide between bowls to serve

Friends, family and The Spice Tailor

Friendship – मित्रता

Three Cheers!!  ‘Little’ dinner parties are back on, and I am ecstatic! I delight in having friends over to eat with us. I adore the preparation, the laying of the table, the lighting of the candles. I love everything there is to love about getting together with those you feel most at ease with. Sharing a meal is so significant to me, even more so since we moved away from our nearest and dearest. It’s a great way for us to spoil new friends, build on friendships and create a real family atmosphere for our children.

Cooking a meal for others really is a great way to show how much you love them; and when I say meal, I mostly mean curry! Nothing warms my heart more than the air filled with the scent of India, the sounds of romantic Hindi love songs playing gently in the background, cutlery hitting plates, sharing plates being passed around and laughter gently powdering the air. Meals like this are the be all and end all for me, and I hope it’s something my children look back on fondly.

An ‘Indian Culture Night’ is a great way of getting everyone involved, whilst savouring some of the words most divine spices.  There are so many wonderful things to explore when it comes to the diverse and vibrant Indian culture which makes it a great conversation starter. Saturday night was cold and wet here, so an Indian meal was the perfect way to warm things up. We popped Om Shanti Om on (best movie ever) whilst we got to work. We chatted, danced, and the children wrote place cards for everyone in Hindi. It was the sweetest touch to the table.

Creating a themed dinner party is so much fun for the whole family. Our table was full. Full of friends, of love, and of laughter whilst brimming with curries and rice, chapatis, naan bread, poppadum and pickles. It was a truly delicious banquet, that we all had a hand in preparing.
What a night to cherish; the beginning of the end of lockdown, celebrating travels to come, India, food, friendship and family; all before diving in to a tray of carefully selected Indian Sweets.

The fondest memories are made, gathered round the table.

Road Trip the Stuart Highway with kids!

I know, I know, road tripping with the kids sounds like a holiday from hell to some people. “Are we there yet” being shouted over and over, popcorn covering the back seats, umpteen toilet breaks and cries of “I’m booooored” interrupting “The Greatest Showman” soundtrack. However, if ever there was a trip we have done, that we could recommend to you, this would be it.

If you get the pleasure of “are we nearly there yet” on the way to the supermarket, this is probably not the holiday for you YET! Some days we were smashing out 700km+ which is not a distance for the fussy traveller! There is no amount of iPad time that can fill that space, so be prepared to play games, sing, write journals, wildlife spot, and throw in a few obligatory arguments into the mix.

Travelling through the red centre of Australia, was not only a great big tick on the bucket list, it was without doubt the trip of a lifetime. Nothing could compare.

 Our top reasons to road trip with your gang

Family time – Yes this is a cert when you’re ‘trapped’ in a car or van with the family. This is the trip to do if you’d like to spend time together, lots of time. There are no kids clubs, it’s just you guys, a few dead kangaroos and the road ahead, but this is what makes it so perfect. As contrived as it sounds, we all learnt so much about each other. We had hours and hours to talk, sing our favourite songs, tell jokes, play games and really immerse ourselves in each other. Life gets in the way of these beautiful moments and a road trip is the perfect way to rekindle lost time. It’s amazing what you talk about when there are no emails distracting you and no YouTube on the tv.

Scenery – Driving through the centre of Australia is like being on a David Attenborough shoot. The dingo’s running past, the Emu looking up to see who is frantically waving out of the Campervan window. The colour of the earth changing so dramatically to that deep, warm red that is so quintessentially Australian was amazing. That same red earth that we soon learnt would be ingrained in our clothes, shoes and skin. Every now and again we would stop on the side of the road and Monty would hop out and find a pile of Kangaroo bones, or a half eaten eagle. The enchantment on his face at his latest haul of treasure to take back to school was priceless. The scenery is like nowhere else on earth, and we were right there, in the thick of it, treading the same ground as people have been for thousands of years, and it felt so magical.

Sightseeing – The beauty of road tripping the Stuart Highway is that you get to see places and speak to people you would never meet if you flew this route. The incredible salt lakes, the vastness of the outback, the eagles soaring above us as we sped up the only highway going North. Road tripping allowed us to follow the signs to places we hadn’t planned to visit, and stop at free camping sites because the scenery was particularly spectacular. Road tripping gives you the freedom to make your own way, in your own time, and stay the extra night if you fancy it.  This is one of the reasons it’s a great holiday when travelling with kids.

Adventure – As our journey went on, none of our excitement waned. I was sitting on the edge of my seat, watching the red earth fly by the van. The children were in the back, faces up against the windows, a live wildlife show, eyes wide and mouths open, shouting “dingo” or “eagle” every now and again! The view is like a movie set. The scenery, unbelievable.. This is the outback. The real outback.  It’s almost too beautiful to put into words. Driving the Stuart Highway is nothing less than epic. The adventure of scrambling through incredible gorges, tiptoeing across water holes, laying your hands on Uluru and looking at ancient aboriginal cave paintings. Free camping, building campfires, finding roadside treasures and footprints of creatures long gone. We loved lying in the red dirt at night, star gazing up at the most breathtaking skies you have ever seen. There is almost too much adventure out there to tell you about.

New Friendships – We stopped at every roadhouse along our journey.  They were all so different but each one had the same collection of people huddled around the fuel pumps.  The drivers of enormous trucks getting a much needed break after hours on the road. There were travellers, refuelling and stretching their legs, batting flies, eating a much needed piece of homemade cake, or sipping on a cold beer. The atmosphere at these roadhouses was awesome. Everyone is there on an adventure and trying desperately get some wifi. People chat to each other, you hear wonderful stories of what’s to come, and swap tips for your onward journeys. A regular servo turns into a hub of storytelling and the birthplace of new friendships.

Journals –  These books are so special. The hours the children spent in the back of the van drawing their surroundings, writing little scripts about what we had seen and sticking in leaflets and ticket stubs from the tours we’d been on. They are filled with adventures, stories and bursting with tales which we will all remember for years to come.  I can picture us holding these books in twenty years time, when our children have their own children, telling tales of the Dingo we saw, the mine we climbed in to, or the dreamtime tales from Uluru. To have pages and pages of aboriginal dot paintings that the children created after visiting Uluru, is such an incredible keepsake that we wouldn’t have got any where else.

New experiences & Noodling – Coober Pedy is a funny old town, almost a little like you have stepped back in time, but, by far some of the best hours we spent on our road trip were noodling in a barren patch of ground just off the high street. Noodling is sifting through the dumps left by the miners and specking is walking slowly along staring at the ground looking for any signs of colour. A very eager gentleman at our camp site told us that noodling was allowed as long as you don’t take a shovel, and showed us on the map where he had collected a jar full of tiny gems. The kids LOVED noodling. I was less enthusiastic, mainly because of the flies, and the fact that I couldn’t find a single sparkly stone. After an hour or so Monty had enough gems to give one to every kid in his class. I was panicking that we were about to give 22 kids our little fortune, but nevertheless he was adamant they weren’t for us!  Noodling is completely free, and one of the days the kids remember most about our trip.

Just go!

Our kids are very used to road trips. I would say this is a must if you want to explore Australia by road! However you plan to road trip; caravan, car, campervan, bus, motorbike or even bicycle, (yes there were a few) get out there and see the magic of the Australian outback. It may seem like a mammoth feat with children but believe me, it was our greatest adventure yet, and I know it will be yours too.


This is not a cheap holiday.

We flew from Melbourne to Adelaide, where we hired a Britz campervan. The van came with everything we needed to be comfortable. We just had to stock up with food and hit the road.

When you weigh up the cost of the trip vs the experience it was totally worth it, but no, it wasn’t cheap! In fact it’s one of our most expensive trips to date and we were only away for 13 days. *Fuel is eye wateringly expensive in the outback.


Tips: 

  • Campsites were fairly reasonably priced, be prepared for some to be a lot more expensive than others.
  • Make sure you book you Uluru campsite first! It gets busy. **The IGA is amazing.
  • Free camping is FREEEE and super fun!
  • Take lots of pens, books, games and music to keep you entertained.
  • Be prepared for no wifi or phone signal. Download movies and games onto your devices, and tell your boss you aren’t contactable.
  • Stock up with plenty of food and drinks. Eating certainly passes the time and roadhouses aren’t cheap!
  • Take a decent camera, the pictures will be wonderful.
  • Pack warm clothes, it gets COLD out there
  • For anyone who suffers with nosebleeds.. Take tissues. The air is DRY! We learnt the hard way.
  • Take your first aid kit.
  • Prepare for the price of fuel!
  • Do a tour of Uluru. It’s worth the money!

The end of the school year is a massive deal in the life of a kid and in the life of a parent too. That summer term is a killer! The most exhausting (and hot) term of the year, then they throw sports day in to the mix! Hellooooo! The children are tired, ready for a huge break, and in my case, I’m absolutely ready to throw all evidence of the school year in the bin, including the grumpy kids. The smelly lunch boxes and the disgusting pencil case *usually graffitied and full of pencil sharpening’s mixed with blu tac or slime. The little bits of rubbish, the scrunched up homework from week 7 and the reminder that for three weeks of the summer term your child lived on marmite sandwiches alone as the fruit is rotting in the bottom of the backpack. I have been known to open the bin and kiss goodbye to a whole heap of school paraphernalia only to regret not simply washing it come the new school year!

In all honestly, when it comes to my ‘back to school prep” I tend to leave it to the VERY last minute. Mostly because the summer holidays run away with me and I forget when term begins, but also because we all relax way too much and that relaxation turns our brains to jelly!

However,  when I saw this new collection making it’s way into Tesco, I knew that it would definitely give me, and other UK Mums, the kick up the behind to get in early and sort out the lunch boxes for the new school year. If you’re the person in charge of school supplies in your home, this is where you can gain brownie points from your little darlings and take away the stress of “back to school”. Let’s be honest we all have a love/hate relationship with Back2School.

The germ resistant liners, the nude food tubs to save us from the single use plastic and for those of us with older kids, the more funky styles that are so hard to come by. National Lamington Day – How many can you eat?

You don’t think your tastes would change that much when you move abroad. I honestly never thought my kids would be taking Vegemite sarnies to school, or eating meat pies like they’re going out of fashion. I also never thought we’d ever get used to Lamingtons after trying my first one three years ago! Hey, the Brits are renowned cake bakers, we know our shizzle when it comes to baking, and the Lamington was like no cake I’d ever tasted before….. However…..

Tomorrow, July 21st, Australians and a few of us expats too,  will be taking time to savour and celebrate the coming of age of an Australian classic, the humble Lamington.

It’s National Lamington Day and I know what I’ll be tucking into frequently tomorrow!

The sweet treat has been tantalising Aussie tastebuds for more than 100 years, and the list of flavours is endless. The Wilson’s are ready and willing to try as many as we can before the visa runs out!! 

Lamington Lowdown

The first ever Lamington cake was made in 1900, most likely for the wife of Queensland’s eighth governor, Lady May Lamington. Made by either the Lamingtons’ French patisserie chef, Armand Galland, or well-known Brisbane cookery teacher Amy Schauer, regarded as ‘the Nigella Lawson of her time’.  We all love a Nigella!! The sponge cake was dipped in chocolate and liberally sprinkled with shredded coconut. Lord and Lady Lamington were said to be so impressed by the cake, that it was regularly requested at Lamington House. If only we all had our own baker…

THE LOWDOWN ON LAMINGTONS

  • National Lamington Day is celebrated on July 21.
  • The Lamington cake was first made in 1900.
  • The exact story of the invention of the Lamington is disputed. Some people think it may have been an accidental recipe after being dropped in a chocolate mixture.
  • The Department of Foreign Affairs and Trade lists the lamington as an Australian icon (along with the meat pie and Vegemite HURRAH), and former Queensland premier Anna Bligh has declared this special cake a Queensland icon.
  • Toowoomba in Queensland is the home of the 2011 Guinness World Record for the Largest Lamington, weighing over 2,361 kilos.
  • A Lamington recipe first appeared in the Queensland Country Life publication in 1900. A recipe then appeared in a Sydney newspaper in 1901, and a New Zealand newspaper in 1902.
  • The world record for the longest line of Lamingtons was set in Adelaide in 2015, with 20,000 (yes that says 20 thousand) pieces of Lamington snaking over 1,073 metres long. The former record was held in England with a Lamington line that measured 885 metres. Who knew the Brits loved Lamington so much?
  • Susan Day makes so many Lamingtons each year that if you laid them end to end, you’d make it from Melbourne to Sydney – hands up who’s coming on that road trip?

Sweet Expo – Good things come to those who bake….

 

Sweet Expo was in Melbourne this weekend, and we hit the Showgrounds to see just what sweetness they had in store for everyone. I am a terrible baker, I would love to be good, but no matter how hard I try I seem to fail! I have a real passion for buying the tools, the colours, the glitters; I want it all…. sadly they’re wasted on me….  Poppy our sweet as sugar girl was straight in the gate and ready to taste anything she could get her hands on, whilst I was more about the 6Ft6 Prosecco slushies, and the demonstrations. Mad About Colour had some spectacular glittery delights that caught my eye as we began to wander!!

 

 

Sweet Expo was filled with small local businesses who set up stalls with everything from cake decorating tools, kitchen gadgets, specialty ingredients, party and celebration products and everything in-between! For all you party people this is a show that you don’t want to miss when it returns next year.

To turn the corner and spot our much loved Oregano Bakery that we miss so dearly from our Sydney days, made my heart skip a beat. Originally creating Lebanese Pizza they are now insanely famous for the Scroll!!! These aren’t just any Scroll, they are top notch Scrolls, with all sorts of delicious fillings, made with love.*Think OMG most delicious dough with even more delicious toppings.. Say Whaaaat???

Natalie’s stall was a joy to look at! I was instantly drawn to her shiny dangly earrings, and couldn’t help throwing my money at her! She cleverly creates gifts that she hopes will make a difference to someone’s day and put a smile on their face. Check her out!!!

Cake decorating for the kids was really fun. $5 to decorate your own little cupcake and all the money goes toward this wonderful charity.

These people know how to party… And they know how to create a party! They were showing off their fabulous confetti filled balloons which we loved. Huge balloons make such a statement!! Lombard claim to have the largest range of party supplies in the Universe, how awesome is that!


 

We loved watching the demonstrations, seeing how fondant roses were created in seconds, and adored all the tasters. We didn’t have time for High Tea but it looked amazing; there were masterclasses for the experts amongst us and plenty of savoury delights for those who were less sweet toothed.

By the time we left we had full tummies, and bags of great tips for creating our own masterpieces at home… Not sure you’ll see my own personal creations on Instagram but hey, I have definitely been inspired to try a little harder at the next birthday party!!! Here’s to becoming a great home baker!!!!

The “Bloomin Great” Ocean Road!!!!

We finally made a trip along the Great Ocean Road a few weekends ago. We packed everyone into the car, and as per usual we prayed to every possible god that the kids would be good!

From Melbourne to Torquay, where we were basing ourselves, is about 145km so not too far on a cold Friday night. We were staying in a property in the centre of Torquay, close to shops and restaurants, which was great. It meant we had everything on hand, should we need it. The house had all sorts of wonderful things to keep us all occupied; from ping pong, to basketball, board games, skateboards and a playstation! I was especially happy as there were plenty of lovely magazines, a beautiful deep bath, and a Nespresso machine.. Me time!! Bliss! Our first night was super comfy, warm and cosy!

We woke on Saturday to glorious sunshine, we headed out, grabbed coffee and milkshakes and hit the road! Driving out of Torquay and toward the Twelve Apostles, we passed all the iconic surf beaches that surround Torquay, and promised ourselves that we weren’t going home without dipping our toes in the water at Bells Beach!

The drive was spectacular. Travelling along the Great Ocean Road is such a magical experience. That iconic Aussie road trip; the ocean almost lapping at the road side as you twist and turn your way toward to the Twelve Apostles. Even with the bickering in the back it was bliss. We broke the 150km drive with a few stops in lovely little beachside towns. We saw Koalas in the wild, peeking at us through the tourist information window (Lorne), the children played on the beaches, and we had the best pork sandwich you could EVER IMAGINE (Apollo Bay)!!!! Pretty much could have stopped right there, the trip was already a cracker!

We made it to the Twelve Apostles at about 2pm, it was incredibly busy! Obviously! You can’t come to Victoria and miss this!

We joined the other gazillion visitors and walked the path (well, Monty hopped and Poppy tripped most of the way) across the road and down toward the ocean. The wind was howling, but thankfully it wasn’t cold. When we turned the corner and caught sight of the enormous sea stack sculptures, rising majestically out of the Southern Ocean, it truly took our breath away. The pictures do not do it justice! It is jaw droppingly beautiful. The hours of endless eye spy, and arguing, was definitely worth it.

Australia has some incredible landscapes, and it’s coastline is second to none. I now completely understand why this road is called the Great Ocean Road. It just has to be on the list for one of the greatest coastal drives of all time.

Bells Beach

Bells Beach is the beach you think of when someone mentions the movie Point Break… Although, it turns out, the movie wasn’t actually filmed there. Why? I have no idea, as this is possibly the greatest surf beach we have visited on our travels so far. I am not a surfer by any stretch of the imagination but this beach was amazing, and judging by the number of people slipping in and out of wetsuits in the car park, this is the place to surf! We could see the ocean was flecked with surfers waiting for a wave, the waves catching them, dropping them off,  and then hurtling up onto the beach. We made our way down the wooden staircase on to the sand. The waves were crashing up right in front of us, almost wiping us out a few times. To think we were treading the sand that so many world famous surfers have walked on, is pretty special, and I just kept telling myself that Patrick Swayze probably stood here with Keanu Reeves at some point too… Well, I can dream, can’t I? Bells beach has a wonderful feel to it, and we’re definitely going to get back there some time. Probably not for a surfing lesson, I think I need somewhere a little more placid!

Apollo Bay Bakery

 Apollo Bay Bakery was where we had a delicious, quick lunch, whilst being serenaded by a travelling ukulele band! How awesome does that sound? Well wait until you’ve tried the roast pork roll with crispy crackling, gravy, stuffing… Oh god I have to stop typing… I mean… The love we have for that pork roll….. Get in the car and go now!

Bomboras

Before hitting the road back to Melbourne we had a feast at Bomboras  in Torquay. Local beer and plates of yumminess! Can’t go wrong with that! I had Brisket on Rye Bruschetta with Coleslaw, Mustard & Pickles.. Need I say more.. Tim had the mussels and said they were great! Check the menu and see for yourself..

My own home chef revolution!

Out of curiosity this afternoon after the children had yet another ‘fish finger sandwich’ lunch, I looked into childhood obesity. I was stunned to read that 1 in 4 Australian children (25%) are overweight or obese (aihw.gov.au), and in the UK today nearly a third of children aged 2 to 15 are overweight or obese (gov.uk). Yes, I double checked, and looked again! It’s remarkable that in a world so set on slamming parents for feeding their children something that wasn’t sugar free, or god forbid non organic, that we have come to this. Our children are getting fatter by the minute, and their teeth are rotting faster than a corpse in the Sahara desert.

Excuse me for thinking that this is possibly down to the plethora of “advice” coming at us from every which way. As soon as you pop out your first born, you are bombarded with horrifying stories of allergies, and incidents. Tales of someone’s uncle’s, cousins, wife who weaned her baby too early and now has an elephant for a kid who has thirty-seven allergies and an epi pen sticky taped to his forehead.

You can’t eat this if you’re breast feeding, you shouldn’t buy that when you’re weaning, you must NEVER EVER let your toddler drink apple juice! It goes on and on and on. Even when your children start school and you’re miserably making packed lunches, you pray that Justin’s mum isn’t on lunch duty; what if she sees that your carrots aren’t organic and you’ve not made your own hummus, (shop bought is a no no these days), oh and you’ve slipped in a KitKat because you’d run out of bread.
We’re bombarded with messages that ring in our heads like Big Ben at midnight; ‘a healthy outside starts on the inside’; ‘Be smart, Eat smart.’ We’re forced to watch grown men, dressed like broccoli shouting slogans at us from the TV, like “I’m always in the mood to eat healthy food”. Oh get lost Broccoli Ben and pass me granny’s homemade death by chocolate. 

Why oh why are we constantly ambushed with all these highly patronising bits of ‘advice’ from companies who are blatantly poisoning us from behind their “eat healthy” message?

As an easily persuaded mum of two, I have become a dab hand at creating so called ‘healthy’ meals that the dustbin enjoys, whilst the children gorge on three-day old banana custard and toast with lashings of butter. After a twenty-minute battle with my 4-year-old to finish his rainbow chard with smashed chickpeas, I promised myself I would stop insisting on following the trends, do my best and that’s it.

I watched on as Monty urged and gagged over the loo, and thought, that’s it, I’m not going to give in to the demands of “super mum” or “green granny” or even the yummy mummy’s at the school gate. I’m making a stand. I’m not prepared to spend endless hours blending, chopping and mashing a daily rainbow of vegetables, making animal faces out of grains or turning meals into murals, so as they can be thrown in the bin or regurgitated down the loo. I’m going back to the old me, pre kids, where I cooked and ate what I really enjoyed, the meals I remember from my childhood. I was healthy and had a varied diet, full of the nutrients I needed. Unlike now, 8 years’ post-partum where I am seriously lacking vitamin D, my iron levels are beyond a joke, I’ve got acne and my stress levels are through the roof. I blame all of this on one thing. The ‘Critical Crew’, the “Quinoa Queens” and the “Soya Sisters”.  The mums who positively shudder when you say the kids had egg on toast for dinner. “What? Gluten? Excuse me? No greens?’

I’m not sorry that my children don’t like parsnip and harissa fritters with a sprout and avocado dressing. They don’t like spaghetti hoops from a tin for goodness sake. There is no way I could get either of my children to gobble up a salmon fillet with a smile on their face, even if it had been submerged in Nutella first.  I’m fed up of creating names for meals that omit the “yukky” ingredient; I’m not calling Calamari ‘Spanish chips’ anymore!

This year I will be making lasagne as I love it, with pasta (full of gluten), rich red wine infused beef, and a mountain of crispy cheese of the dairy variety on top! I’ll be making stir-fry’s, bangers and mash with veggies and lashings of gravy,  chicken pies, homemade curry with rice, cakes, stews, Sunday roasts, cooked breakfasts, bubble and squeak!! I won’t be cutting out this, substituting that, or limiting anything. I won’t need to.  I’ll be cooking like my mum and dad did, and their parents did before that. I’ll be cooking healthy family meals, with no one sitting on my shoulder ‘advising’ me on how to add lentils to my already brilliant shepherd’s pie or make my morning porridge using Quinoa because oats are from the devil. The statistics speak for themselves; parents just don’t need so much input when it comes to feeding their children. It’s overwhelming, confusing, and mostly downright unhelpful; resulting in our bins getting full and our kids get fat.


Family chefs, be true to yourself, you know what’s right, you know what’s good, you know your children. Don’t let our little ones become confused about food and health and therefore miss out on the enchantment of sitting at the table with loved ones. If we don’t teach them that wherever we are in our lives, the family dinner table is the most wonderful place to share time, no one else will.

Don’t let anyone tell you anything different. Here’s to the true home cook’s revolution.
